Miso Glazed Salmon

1/4 cup packed brown sugar
2 Tbsp low-sodium soy sauce
2 Tbsp hot water
2 Tbsp miso (soybean paste)
4 (6 oz) salmon fillets about 1 inch thick
1 Tbsp chopped fresh chives

Preheat broiler. Combine the first 4 ingredients. Arrange fish in a baking dish coated with cooking spray. Spoon miso mixture evenly over fish. Broil 10 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness, basting twice with miso mixture. Top with chives. Yield: 4 servings

This is great served with Wasabi mashed potatoes and a side of sauteed or steamed snow peas and sliced carrots.
